Flapjacks, Masterchef style

This morning I really felt hungry and in need of something sweet for elevenses! So I looked in the Masterchef Bible for a quick and easy snack. Flapjacks (page 168) was just the ticket.




 
I'm not the World's greatest cook so a recipe with few ingredients and short cooking time is ideal.

Let me share it with you:

225g Butter (plus extra for greasing)
225g Light Soft Brown Sugar
2 tbsp Golden Syrup
350g Rolled Oats

I made a start by preheating the oven to 150C, and lightly greasing a cake tray.
Took me ages to find a tray, but rubbed some butter inside.

Then melted the butter in a saucepan, threw the sugar and syrup in too. Then off the heat and mixed in the oat and contents of the pan into a bowl. It seemed far too dry, so I put a bit of extra butter in the bowl. Not too much extra, about 25g. At this point I was worried that my enthusiasm had got the better of me, but luckily it helped to bind the mix together.

Then place the mix into the tray. Then squash everything down - hard. Make the mix as compact as possible.

Now bung the tray into the middle shelf.

The cookbook says they need 40 minutes. My oven is hot as hell, so it only needed 30 minutes.

Keep the mix in the tray, and don't do anything for 10 minutes. Sit down and have a cup of tea!!!

Now cut the flapjacks whilst in the tray.

Wait until it is completely cold, and eat away!!!!

Really enjoyed these, but I think they were a bit dry, would have preferred them with more butter and maybe a few drops of almond essence.
