What to cook? A few days ago I baked Masterchef style flapjacks and was a little disappointed with how dry they were.
As you know, Im a rubbish cook. The only way I am going to get better is to keep trying. So I chose a different recipe for flapjacks today. Enter the Queen of butter, Delia Smith.
I picked a recipe from her 'Baking' book, (page 117.)
110g light brown sugar
175g butter (I used I unsalted President)
1 desert spoon golden syrup
175g porridge oats
2 drops of almond essence
Melt the butter, sugar and syrup together.
Off the heat and mix in the oats and essence.
Place the mix into a baking tin, pressing down, (just like the Masterchef recipe).
Put in a preheated oven 150C for 40 minutes.
Leave it 10 minutes and cut into slabs or squares, but keep in the tin until cold.
Initially I was worried I had completely cocked this up.When I first took it out the oven it was swimming in butter!!
Had I not cooked it long enough? Had I misread the instructions? So in true masculine style, I thought if I ignore the problem - it will go away! Haha, and it did. I left them to cool for half an hour, and the butter soaked into the flapjacks.
These flapjacks were really gorgeous gooey sweets, but probably too heavy on the butter.
My sister-in-law loved these flapjacks. Unfortunately she is currently tied up and locked in the cupboard. It was the only way I could stop her from eating them all.
