Nigella's Sweet and Salty Crunchy Nut Bars

The recent weather has been horrendous!

What we need is comfort food, the higher the calorie count the better, and if it includes chocolate - even better!!!!

This is why I made Nigella's Sweet and Salty Crunchy Nut Bars. If you are in need of an emotional lift, make these now.

Ingredients
  • 7 ounces bittersweet chocolate (or 1 heaping cup chips)
  • 4 ounces milk chocolate (or 1/2 cup chips) (or 11 ounces milk chocolate instead)
  • 1 stick plus 1 tablespoon (9 tablespoons) unsalted butter
  • 3 tablespoons golden syrup (recommended: Lyle's)
  • 2 1/4 cups salted peanuts
  • 6 ounces honeycomb candy
  • Special equipment: 1 (10-inch) springform pan or 1 rectangular aluminum foil pan approx. 13 by 9 by 2 inches










  • Masterchef's Beef Stroganoff

    I love beef stroganoff. My wife has made Delia Smith's 'Three Mustard Beef Strogonoff' a couple of times - but I decided to be flash and do the Masterchef recipe. It was ok, but not as good as the Norwich City FC supporter's creation.



    Ingredients
    675g rump steak (trimmed)
    3 tbsp plain flour
    Salt/Pepper
    1 tbsp paprika (I mucked up & used smoked paprika - don't, too harsh)
    60g butter
    1 onion (thinly sliced)
    225g chestnut mushroom (had to use button)
    300ml soured cream (wish I'd use creme fraiche as this dish was too sour)
    1 tbsp French mustard
    Lemon juice

    Start by cutting the meat into 5cm strips. Put them in a food bag, along with flour, salt and pepper, and paprika.



    Give the bag a jolly good shake to coat everything and put to one side.



    Frying pan on with half the butter on a low heat. Add the the onions for 8-10 mins until soft and golden. Now the mushrooms for 2 mins.

    Tip the onions and mushrooms into a bowl and keep warm.

    Max heat and when the pan is hot add remaining butter. Fry the beef, stirring continuously for 4 minutes.

    Time to reunite the onions and mushrooms to the pan for 1 minute.

    Reduce to a low heat and stir in the cream and mustard for a gentle minute. DON'T BOIL THE CREAM!

    Add the lemon juice and serve with rice.

    I followed Masterchef's guidance on boiling rice.
    Excellent boiled rice
    Quantity of rice, plus 1.5 quantity of water. Bring it to boil, stir it once then simmer uncovered until all the water is absorbed.



    Take it off the heat, put a clean tea towel and lid on it and leave for 20 minutes.
    Now take the tea towel away and replace the lid for 5 minutes.

    Fluff it up with a fork and serve - works every time!



    So in conclusion, nice rice but Delia's Beef Stroganoff is better.
